Chicken
Tortilla Soup
Chicken Tortilla Soup – This one is a reliable stand-by in our house. It goes together quickly, smells and tastes great, and freezes well.
Instructions: (You will need bag from freezer and bag from
cupboard.)
Thaw chicken, at least partly.
Dump chicken, corn, all cans, and 1 cup (generally 1/2 jar) of salsa into crock
pot.
Stir.
Cover and cook on low for about 5-6 hours.
Serve with tortilla chips and cheese if desired.
To build kit:
Bag in freezer:
Zip-top bag with 1 lb cubed chicken
½ bag frozen corn
Zip-top bag with Vegan Gourmet Cheddar or other GFCF "cheese", shredded,
optional
Bag in cupboard:
2 15 oz cans Nature's Promise or other GFCF black beans
2 15 oz cans (or 1 28 oz can) Nature's Promise or other GFCF diced tomatoes
Jar of Nature's Promise or other GFCF salsa (using 1 cup)
1 14 ½ oz can (or 2 8-oz cans) Nature's Promise or other GFCF tomato
sauce
Tostitos Tortilla chips or Fritos or other GF "corn chips"
