El Paso Pilaf

El Paso Pilaf – This makes a tasty high-protein side dish or a light meal. Good with or without meat.

Instructions: (You will need bag from freezer and bag from cupboard plus 2 tsp oil.)
In a large pot, sauté onions in oil OR brown beef and onions in a large pot.
Add peppers and cook until soft.
Add in remaining ingredients, using only 2/3 c salsa.
Bring to a boil, then reduce heat and simmer until rice is tender (check time on package).
Serve with tortilla chips and cheese if desired.

To build kit:
Bag in freezer: (Below is according to recipe. I would probably store all the veggies together.)
Zip-top bag with ½ c chopped onions (For convenience, I use frozen chopped onions in this.)
1/2-1 lb package of ground beef, optional
Zip-top bag with ¼ c chopped bell peppers (I often use more than this)
Zip-top bag with 1 c frozen corn
Zip-top bag with Vegan Gourmet Cheddar or other GFCF "cheese", shredded, optional

Bag in cupboard:
1 15 oz can Nature’s Promise or other GFCF kidney beans
1 jar Nature’s Promise or other GFCF salsa (using 2/3 cup)
1 14-oz can Swanson Natural Goodness or other GFCF chicken broth
Zip-top bag containing: 1 cup rice, ¼ cup dried lentils, ½ to 1 tsp chili powder, and dash garlic powder
Tostitos Tortilla chips or Fritos or other GF "corn chips", optional
