Sirloin Stir-Fry

Sirloin Stir-Fry – This colorful stir-fry even works for soy-free diets! If you’ve done the prep work in advance, it’s a snap to cook up in even less time than it takes to cook the rice. Just be careful not to overcook the beef. (Adapted from Taste of Home.)

Instructions: (You will need bag from freezer and bag from cupboard PLUS 2 TBS Earth Balance or other GFCF “butter” substitute or oil.)
Cook rice according to package directions.
Meanwhile, stir-fry steak just until no longer pink. (Don’t overcook!) Remove and keep warm.
Heat “butter” or oil in same skillet. Dump in vegetable bag and stir-fry until tender.
Add contents of cupboard bag. Bring to a boil. Reduce heat; cover and simmer for 5 minutes.
Return steak to pan. Cover and simmer until heated through.
Serve over rice.

To build kit:
Bag in freezer:
Package of sirloin strips (stir-fry beef), about ¾ lb
Zip-top bag containing 1 each – onion, green pepper, red pepper, all chopped plus 3 garlic cloves, minced

Bag in cupboard:
14 ½ oz can Del Monte or other GFCF Italian Stewed Tomatoes (or use Italian Diced Tomatoes)
Zip-top bag containing 2-3 tsp dried basil, 2 tsp sugar, 1 tsp garlic salt, & ¼ tsp pepper
