October Tips

J Thanks to Deb K. for preparing this month’s handout! - Joy

RECIPES:

Halloween is THIS WEEK, so I want to share two tips that have made Trick-or-Treat night a success for us.

This has allowed our son to enjoy Halloween without the frustration of collecting treats that he cannot eat.

Happy Halloween!

Thanksgiving is right around the corner!  I found some great ideas and recipes online to make Thanksgiving work in a GFCF household.  Thanksgiving can be difficult if you travel to relatives, so you have to plan for your GFCF meal ahead of time.

Turkey

Make sure your turkey is GF!  Many turkeys have broth as an added ingredient!

Stuffing ideas:  (check this links for a wide variety of stuffing ideas)

http://specialchildren.about.com/od/foodallergies/qt/glutenstuffing.htm

(We have just substituted GFCF bread for the bread in our traditional family stuffing and that has worked.)

Mashed Potatoes:

Simply substitute your own CF milk and GFCF butter.  I also found a recipe that just mashed the potatoes and then added some olive oil and salt.

Pumpkin Pie:

Here is a recipe from About.com that is Milk, Egg, Wheat, Peanut, Soy, and Nut free

Ingredients:
2 cups canned pumpkin
3/4 cup brown sugar, firmly packed
1 1/2 cups water
6 1/2 T. corn starch
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. ground cloves
1/2 tsp. ginger
pie crust*
Topping (optional)
1/4 cup brown sugar
1/4 cup coconut

Directions: Preheat oven to 375 degrees. In a medium saucepan, combine all ingredients. Cook over medium heat until mixture begins to thicken, stirring constantly. Pour into pie crust. Bake for 30 minutes or until firm. Remove pie from oven, sprinkle coconut topping on top. Bake 5 more minutes.

* To make this recipe gluten-free, use your favorite gluten-free pie crust recipe.

Here is a complete Thanksgiving dinner that you can get some ideas from:  http://aut2bhomeincarolina.blogspot.com/2006/11/happy-gfcf-thanksgiving.html
