Banana-Coconut Ice Cream – I had
serious doubts when a friend said she was bringing homemade GFCF ice cream,
but this is awesome! Almost makes me think about buying an ice-cream maker for
our house! (NOTE: The original recipe also called for 1/3 cup sugar, mixed into
the first two ingredients until dissolved. My friend skipped it and the ice
cream was plenty sweet without it.)
1 1/2 cups Goya or other GFCF coconut milk
1 cup Goya or other GFCF cream of coconut (look for this in cans near the drink
mixes)
1 1/2 cups mashed ripe banana (about 3 bananas)
Combine first two ingredients in a medium bowl. Stir in banana; cover and chill.
Pour mixture into the freezer can of an ice-cream freezer; freeze according
to manufacturer's instructions. Spoon ice cream into a freezer-safe container;
cover and freeze 1 hour or until firm.
8 servings (serving size: about 2/3 cup)
