Black-Bean Sausage Soup (from Mennonite Community Cookbook) – We received this as a post-baby meal. It’s a not-too sloppy, but super yummy “sloppy joe”. Also great as a thermos filler for school lunches and freezes well.

About ¾ lb Giant or other GF sweet Italian sausage, casings removed
2 large sweet onions, chopped (I sometimes substitute half to one bag frozen chopped onions)
2 medium green peppers, chopped
5-6 cups homemade, Nature’s Promise, or other GF brand chicken broth
4-6 large carrots, sliced
6 shoulders celery, sliced
2-3 large tomatoes, chopped (or substitute a 28 oz can Nature’s Promise or other GF diced tomatoes, undrained)
About 15 mushrooms, sliced
2 cans (15 oz each) Nature’s Promise or other GF black beans, undrained
2 ½ tsp onion salt
1 ½ tsp EACH dried thyme leaves, crushed rosemary, garlic powder, basil leaves and celery seed
1 tsp EACH dried marjoram and oregano
½ tsp EACH dried tarragon leaves, caraway seed and ground sage

In a very large pot, brown sausage. Add all remaining ingredients. Simmer at least 45 minutes or until vegetables are tender and flavors are blended. (I often simmer for hours.) Freezes well.
