No Grain Pancakes – Looking for some protein in your breakfast options? Here is a unique pancake recipe from Kathleen. Enjoy!

5 Tablespoons Walnuts (very finely ground)
½ teaspoon GF baking powder
2 Tablespoons Tofuti or other GFCF sour cream
1 egg, lightly beaten
2-3 teaspoons water (start with two; add more if batter seems too thick
2 teaspoons maple syrup
1 teaspoons McCormick pure or other GFCF vanilla

Mix the walnuts and baking powder together first. Then add in all other ingredients and blend well. (Batter will seem runny compared to regular pancake batter.) Pour into preheated pan. (Use “butter” or oil). Cook on low/med heat for several minutes on each side and covered. These will be very flat and smaller ones are easier to flip.
