Pam’s Banana Cake – Thanks, Pam, for sharing this with us!

2/3 c Earth Balance brand or other GFCF shortening
1 2/3 c sugar
2 eggs
2/3 c Dari-Free
2 bananas, mashed
1 ¼ tsp GF baking powder
1 ¼ tsp baking soda
¼ tsp salt
2 ½ c Betty Hagman’s flour blend
½ to 1 cup Enjoy Life Chocolate Chips

Cream shortening and sugar together and add eggs; beat well. Add milk; stir. Add mashed bananas and mix well. Add baking powder, baking soda, and salt; stir. Add flour and mix. Then stir in chocolate chips. Bake at 350 for 35 minutes in a pan greased with olive oil.
